CHICKEN AND HAM PIE
Serves: 4-6

Ingredients

2 Carrots, peeled and sliced
1 pound Cooked chicken, diced
1/4 pound Ham, diced
2/3 cup frozen Peas
2 tablespoons Butter
1 medium Onion, chopped
3 tablespoon all-purpose Flour
1-1/4 cups Chicken stock
2/3 cup Milk
2/3 cup Half-and-half
Pinch ground Bay leaves
8 ounces Puff pastry, thawed
1 Egg, beaten to glaze

Method
Cook the carrots in boiling water for 7 minutes. Drain and mix with the chicken, ham and peas in an ovenproof pie/casserole dish.

Melt the butter and cook the onion until soft. Add the flour and cook for 1 minute, gradually stir in the chicken stock. Bring to the boil, stirring and simmer until thickened. Stir in the milk, half-and-half and herbs, season and heat without boiling.

Pour the sauce into the pie/casserole dish. Roll out the pastry on a floured surface until a little bigger than the top of the dish. Cut off a strip of pastry and place on the rim of the dish, moisten, then place the remaining pastry on top. Trim the edges and press to seal. Make a hole in the center of the pastry and decorate with pastry trimmings.

Brush with beaten egg, then bake at 375 °F for 40 minutes, until the pastry is cooked. Serve hot.

Sounds like a lot of very involved and creative cooking going on here. That is what makes the Holiday so special and to have this with friends and/or family. We will be at our daughter's and most likely it will be baked spiral ham with raisin sauce, some type of potato, squash and a green vegetable. Lots of great snacks before dinner like deviled eggs, shrimp with coctail sauce, variety of crackers and cheese and wine.

We will be having vegetarian lasagna. For leftover baked ham, I like to make Golden Potato Bake. It is kind of like scalloped potatoes but better. You take and slice the potatoes thicker, probably 1/4", and layer them in a 13 x 9 pan with the ham having sprayed the pan with non-stick. You then take 1 or 2 onions and saute them in maybe 1/3 cup butter or oil and pour this over the top of the potato ham mixture. Then you top with sharp cheese, a cup or two depending on your preference. Cover with foil and bake 45 minutes at 400 degrees and then remove the foil and bake about 15 minutes or until the cheese starts to brown. We just really like this and it heats up well as a leftover also.

They are fun to make and taste good. We don't eat old fashioned foods very much (too much fat usually), but they still seem to taste so good when I DO cook them.

I make my own Parker house rolls. YUM...We will be having the turkey and everything that goes with it. I have made all kinds of candy and given it away, will have to make another batch of fudge before the kids get here.

We had a fish fry for Thanksgiving so I think everyone is ready for the Turkey! Merry Christmas!!!
