Just wash them, dry them and poke them a few times. Crank up the oven to 450 and leave them in more 45 mins. Mmmmmmmm Use russets for baking too.

I guess it gets the skin crisp too because the skin is my favorite part. I will try this next time.

Yep! Me too lol. I even had a conversation with my son about this yesterday & said that to him. He laughed and reminded me when "grandma" used to stuff the turkey with sausage stuffing the night before Thanksgiving and put it down in the basement overnight. How is it that we are still alive!

I just rub the potato with oil, poke it & bake at 400 for an hr. and it is very crispy, I line the pan with Parchment paper and it doesn't ruin the cookie sheet.

I mostly use Pioneer Woman's recipe. At one time I had a Weight Watchers recipe that was pretty darn good considering it was low calorie...don't know where that one is. Hold on, here it is: Weight Watchers Twice Baked Garlic Potatoes Recipe - Food.com - 261777

Our son who is a Head Chef in NJ just called me yesterday to say that it has been proven that baked potatoes should Never be wrapped in foil to bake them or after baking. There is a very informative article that states that potatoes already have spores and when baking with the foil, the aluminum causes toxicity and can produce Botulism. He said that their is an Inspector that goes around to all the restaurants in NJ to make sure the baked potatoes (after baked) are not sitting in the warmer. An incident occurred in Texas where many people came down with food poisoning and the Health Dept. found out it was from the potatoes. My son said put oil on the potato, puncture the potato & bake, when done put in a covered dish. Store potatoes in fridge within 2 hrs. without foil. He also told me never to put raw garlic in a jar covered with oil, within a couple of wks. the oil gets rancid and the raw garlic absorbs the bacteria. I hope you don't mind that I shared this information. kelsie
This is true folks. FYI.

Again like everything else proper cooking temps and storage temps minimize risk.

The Aluminum dosent cause the toxicity but helps propagate the bacteria in combination with unsafe coooking and storage temps.

Cooking with Aluminum is fine if you get the food to the proper temp. I like 165-170 for my taters as it makes the inside fluffier.
