Can you just let bottled water sit for years and still drink it safely?

The true answer is "it depends". After a certain amount of time the chemicals from the plastic leach into the water. The amount is not usually a toxic amount but it can be enough to change the taste of the water. And, while the amount may not be a toxic amount I really don't need to get any extra over the amount I am getting everyday already.

Also, changes in temperature expand and contract the plastic. So after awhile, you might find air bubbles in the water. It doesn't mean it's bad, but it does mean that air has gotten through the cap. I guess it's possible that it could eventually stagnate and start growing things, but we found water bottles in our house when we moved in that came from a company that went out of business 10 years before we bought the house. The water was fine. Those were glass bottles though - your mileage may vary
