Costco makes a darn good one. But that is because it is slathered with cream cheese frosting.

Personally, I would rather add more cocoa and have a chocolate cake. Which is also darn good slathered with cream cheese frosting.

How does the U.S. lag behind? The U.S. Government also requires companies to stop using dyes that are harmful, but red dye is not harmful, so it is not banned. Personally I would not make a red velvet cake, because I do not find them interesting. But hey, whatever floats your boat.

Red Velvet is just chocolate cake, and pretty bland chocolate cake, at that. It's no great shakes.
