For me, personally, eating this way reduced my cholesterol 70 points, and my ratios are excellent. If you're a carb-sensitive person, concentrated carbs in the form of grains, whole or otherwise, or potatoes can be problematic and RAISE cholesterol. Without looking it up - gotta get to work here, been slacking - Ornish's 10% mostly vegetable fat program actually worsened cholesterol ratios. His plan raised the "bad" cholesterol and lowered the "good" cholesterol. Totally opposite what he was trying to accomplish.
Basically, if you eat a lot of starches and/or sugars, your insulin must go up temporarily to manage them. Too much circulating insulin causes the body to store fat. After a while, insulin receptors get less sensitive, so you need more insulin to deal with the same amount of carbohydrate. So you will have more and more insulin being produced, etc. Eventually, this makes a fat diabetic in many (if not most) cases. Your personal genetic makeup determines whether this happens, and how quickly.
