we eat broccoli at least once a week here. I never let water touch it during steaming. sometimes use a cheese sauce. sometimes in a pinch I steam a bit of broccoli and add it to a can of cream of mushroom soup with a bit of cheddar cheese and a can of milk. the kids love it. that is about the only processed soup i serve
cauliflower on the other hand i almost always sprinkle with olive oil, mrs. dash and parmesan and roast for a few minutes. yum yum
I only steam my broccoli or cauliflower and add a bit of salted butter before serving. Sometimes I make an East Indian cauliflower/ potato dish ( Aloo Ghobi), or we ear eat it raw!
Roasted broccoli -- well rinsed and dried broccoli cut into larger bite-size florets. Toss in a baking dish with olive oil/cooking oil of your choice, Cavender's Greek seasoning and a bit of cayenne. Roast for 30-40 minutes, stirring once or twice, until brown/blackish bits form. Delightful.
I don't really like cauliflower. It is ok roasted. (I like cumin, coriander and chili flakes for roasting either)
Broccoli? I steam it with garlic powder/chili flakes and some salt. Then finish it with a spritz of lemon juice or maybe some evoo or butter. That is the "pantry way"
If I have more time? Sautee with a bit of garlic/chili flakes and a goal of getting a few brown edges.
Rosted with garlic is good. And finished with a hard and sharp cheese like pecorino romano.
I also like stirfried with some ginger and soy sauce!
I like brocolini better than both of those veggies.

I roast in a toaster oven at 350 and it takes 16 minutes or so. Love roasted broccoli. I line my baking dish with foil and there's no cleanup.
