I usually steam mine with a big pot with a little water in the bottom and a colander and a pot lid over them. Also, does everyone eat the broccoli stems? I peel them until I hit the soft parts and then .. actually, sometimes I just don't steam them. I just eat them plain as hearts of Broccoli. Cut into matchsticks and tossed in a salad is good, too. I ate so much broccoli with cheese as a kid. Then I got older and figured out other ways to enjoy it. (It's still pretty dang good with cheese sauce, don't get me wrong.)
Apologize if this is supposed to be in Recipes category. Seemed a little generic for that forum.
I leave a bit of stem attached to the heads, and save the discarded parts for soup. I boil the broccoli for 3 mins, drain the water, throw in a mashed garlic clove or two, a dash of olive oil and salt. Sometimes a bit of lemon juice depending on what else I'm serving.
Broccoli: steamed with a little seasoning as a side dish.
I absolutely eat the stems; I peel off the tough outer layer and what's left is tender enough to be served raw in a salad.
Actually I will eat broccoli just about any old way, I love it!
Cauliflower - use in all sorts of Indian curry dishes and I eat lots of Indian/curry. There are a ton of different types of gobi (cauliflower) curries.
Roasted cauliflower....toss with a little oil and spices and roast at high heat. Good finger food.
Tempura. Almost anything is great deep fried in tempura batter but cauliflower is right up there and broccoli is great that way too.
I am not opposed to raw broccoli or cauliflower dipped into ranch dressing.
I forgot one of my favourite easy broccoli soup recipes. Can be eaten hot or cold.
Off the top of my head:
Couple of heads of broccoli, cooked al dente.
About 4 cups of broth. Can be chicken, vegetarian, ham, whatever you like.
Salt and pepper to taste.
Curry powder to taste.
Sour cream. Or plain yoghurt, a cup or two.
Combine all ingredients in a blender and blend until smooth.
When serving hot, it's nice to leave some of the cooked broccoli aside and add it to the rest of the pureed soup for more texture.
A boiled potato or two (regular or sweet) will thicken the soup.
Hot peppers or pepper flakes add a bit of heat.
I like my broccoli steamed with butter, raw in salads or dipped in ranch dressing. Cauliflower, on the other hand, has to be raw unless I make "cauliflower mashed potatoes".
I like broccoli and cauliflower roasted. Also, I pickle cauliflower with carrots, onions, garlic, jalapeno, and oregano in a cider vinegar solution to use as a condiment with tacos.
Steamed, saute'd with garlic and oil or I make broccoli bake or cauliflower casserole. Both recipes are in the other forum.
