I'm making my signature pasta dish tonight - i call it penne leilani!

1 box penne pasta
a jar (or 2) of vodka sauce (sometimes when i'm feeling creative I'll make my own - the home made version usually comes out better)
chopped mushrooms
1 onion chopped
1 red pepper chopped
a few garlic cloves chopped (sometimes I'll roast the garlic and add it that way)
fresh spinach leaves
package of hot italian sausages
I always keep a jar of hot italian peppers in the fridge, and when i'm in the mood for spicy i'll add a little

boil the penne
cook the sausage and place in cold water after cooked (the cold water allows the sausage to cool so you can cut it easier); slice afterwards
saute peppers, onions, mushrooms and garlic
add spinach to saute a few minutes before finished
toss everything together and serve.

I don't have red potatos but I have baking potatos. I need to see if I have green beans still. I do have little trees(broccoli)........

Tonight is pork chops in mushroom gravy with mashed potatoes and of course fresh broccoli. This is of course if hubby doesn't decide to grill the pork chops. But it will be pork chops of some kind!

You can cut up or quarter the potatoes, throw olive oil and seasonings on them, and roast them.

Tonight, my wife has asked that I make ganiling (guh-neel-ing). It's a dish I learned to make when I lived in the Philippines. Essentially, it's ground pork, diced red potatoes, onion, and garlic. It's sauteed in olive oil, then a small can of tomato sauce is added to bind it all. I normally serve it over rice (I prefer Jasmine rice.).

Strip steaks with a tomato on the side for a starter. I'm thinking about trying to make some cheesy garlic mashed potatoes for the first time too. We shall see how ambitious I am as the day progresses.
