Tonight is the Homecoming game for the school I work at and the dance team I direct is performing at half-time, so I will probably have a hot dog at the game. Or I might wait until I get home and make a real gourmet meal for myself and enjoy some wine!

If you decide to make chicken & rice too, make sure you use some soup to cook the rice. It adds so much to the flavor.

Well, dinner was a bust last night... the kids wanted NOTHING to do with it. Hubby liked it though... so, that was good. But, can't make it again...oh well...Tonight the kids are spending the night at the Inlaws... YIPPEE! Had a blowout with the FIVE YEAR OLD Diva Child Teenage Wannabe last night... looking forward to the break... and I might just break the ban on chocolate for this specific event. I can't deal with the stress. I think I am making a special trip the the LINDT STORE today to help make myself feel better... Hoping they are giving away the Hazelnut balls today... mmmmmmm... tonight I am making hubby take me out to eat... screw the WW points... I need to stuff my face to comfort the mom guilt I feel....

No need to feel guilt skbs.....kids thrive on making us do that! Ha! Go out to dinner and eat some chocolate but forget any bad feelings as I am very sure your little 5 year old will! At least they keep our hearts ticking and the blood pressure up!!

Steaks are thawing in the fridge. Steak tonight or bust. I may bust anyway after dinner. No dessert for a few after nearly a week chocolate cake. By tomorrow Key Lime cravings may start to influence my planning. And then again coconut cream may intercede.

TGIF!! skbs, I had 3 little diva's back in the day and yes I always needed a break to calm down and relax, enjoy your night! Working tonight so hubby is on his own. Love going to fairs just to eat, ours is next month and can't wait.

Here's the deal, I too had an issue when I first made this pie but what I figured out is even when using the Pilsbury crusts (which I don't use anymore, I use Martha Stewarts crust from her baking book, sooo easy and mucho better) is I unwrap them and roll them thinner/bigger, about 1/2" bigger than needed.
When I put on the top crust (which will be the bottom) I fold the top under the bottom lip (which is that 1/4-1/2" bigger) and then crimp it with a fork to seal it then I lift it off the pie pan a little just to make sure it's loose.
Give it a try, it's really not that hard!
