I can relate. When I lived in CA, since it rarely got really cold, I even grilled in the rain!! You just can't beat that flavor--oh, and the clean-up is so much easier!!

Remember in one of my earlier posts when I put my leftover roast with some gravy in those zip-lock plastic containers and froze them?? Well tonight I'm taking one of those containers out and warming it in the microwave, making some mashed potatoes, some squash, a couple slices of bread to put the roast beef and gravy on---walaaa--hot roast beef sandwiches. Fast, easy and little clean-up. And you all know that is "my" kind of meal.

Kaykay, I had the stroganoff tonight...I did add some mushrooms and I was having a glass of wine so I added a bit of that--why not?? It actually turned out pretty good! I like the idea of having the wine in hand and also a bit to add to your recipe!!

Why?? Is there a medical reason you are only eating something like this? If I wre single I would probably eat like that everynight. But, since my husband enjoys food I am stuck trying to figure new and different things to make. That is why I started this thread. I am domestically challenged!! But I am making an effort. As I said--if it were only for me I'd be doing the fast food thing or simple things like you mentioned.

We had chorizo tacos with homemade salsa, beans, and rice. I am STUFFED.

Tuna melts with avocado and swiss. A friend gave me a whole bag of avocados so it is avocados with everything this week!

broiled salmon, asparagus spears, and some brown rice. Should be delicious, the wife is cooking!!!!!!
