I buy a dannon low-fat yogurt (32 oz), spoon it in to the thing, and wait 45 minutes to 24 hours. That's it!
The whey (the sour part of yogurt) drains into the bottom and you can dump it in the sink like me, or some people cook with it or drink it. (shudder)
You're left with a milder, thick substance that resembles sour cream or cream cheese, depending on how long you leave it in the strainer.
I don't cook with it much, mostly use it as a cream-cheese like spread (flavor it with herbs and spices) or use it instead of some or all of the mayo/sour cream in things like tuna salad, egg salad, salad dressings, etc. You can feel virtuous because it still tastes great but you're being healthy. I only like diet foods that taste really good, call me picky...

I have some visitors arriving from UK this evening so I think I ought to make them something special for dinner. Only - got no idea what to make and I have a whole house to clean and prepare as well!
Hopefull inspiration will strike as I vacuum and make beds up - or the dinner fairy might appear, ya never know!

Yeah, tell me about it! I guess they think it's really healthy. I know that a lot of the calcium drains out with the whey, but I don't think my diet is hurting for calcium..

Ick, ick, ick, not me, no way, ever. If I ever went on Survivor I am sure that is the disgusting food they'd give me to drink. Eeew.
