Oh my! I have been reading to catch up for sometime ha ha. Thanks all for checking out my albums as small as they are it is at least a little something. I love arts and crafts. Cooking too!! Kats I am not sure how long it took. Not but a few hours. Over a few evenings How are you and you DH?
Skbs I would not mind a princess or even a lady bug ha ha! Younglisa what a nice thing you had to say I do appreciate that.

It is raining here BIG SMILE! I know for most of you it is not looked forward to but I don't get seasons. Rain is so occasional that I turn in to a little girl at the first few drops Since I will be cooking tomorrow I was thinking corn chowder.hmmmmmmmmmm :0)

Chayote Relleno
Ingredients
  • 4 chayote squash, halved, seeded
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 11/2 teaspoons salt
  • 1/2 pound chopped mushrooms
  • 2 garlic cloves, minced
  • 2 jalapeno chilies, minced
  • 1/2 teaspoon ground cumin
  • 2 tomatoes, peeled, seeded chopped
  • 1 to 2 tablespoons chopped epazote leaves or fresh oregano
  • 1 cup dry bread crumbs
  • 1/2 cup toasted almonds, chopped
  • 1/2 cup grated Cotija or Parmesan cheese
Directions

Preheat oven to 350 degrees F. Cook unpeeled squash in lightly salted water until crisp tender, about 15 minutes. Drain well. Scoop out most of flesh, leaving 1/4inchthick shell. Season shell with salt and pepper. Coarsely chop chayote flesh. Set aside.
Heat oil in heavy large skillet over mediumhigh heat. Add onion and salt and saute until tender, about 5 minutes. Add mushrooms and cook until most of liquid evaporates. Add garlic, jalapeno and cumin and saute until fragrant. Add tomatoes and reserved chayote flesh. Stir until most of liquid evaporates. Stir in epazote, bread crumbs and almonds. Season to taste with salt and pepper. Spoon mixture into shells. Sprinkle with cheese. Arrange shells in large baking pan. Pour enough hot water around shells to reach 1/4-inch. Bake until heated through, about 15 minutes.

I made some potato soup for dinner. We ate a late lunch so just wanted something we could eat through the evening if/when we got hungry.

We ate some more of my Birthday Buffet.....ham, Gen Tsao's chicken, seseme chicken and shrimp cocktail.....I don't think I will weigh in tomorrow.....I have had such a good day.....it will be worth having to lose a few of the same pounds again. "Yes I Can"

I'm going to take a steak out of the freezer for tacos tomorrow night. Thawing over night will allow me to marinate tomorrow. What to marinate with? That is the question.
