When I asked the spouse what he wanted for Valentine's Day, he said "food." So I bought a couple of bags of Swedish meatballs from Ikea, and lingonberry preserves to go with.
Ingredients
5 ounces spinach (1/2 bag)
1/4 cup lite raspberry walnut vinaigrette dressing
1 (11-ounce) can mandarin oranges in light syrup, drained
1/2 cup grape tomatoes (rinsed)
1/4 cup walnut pieces
Steps
1. Place spinach in salad bowl; drizzle with dressing and toss to coat
2. Add remaining ingredients, toss and serve.
Enjoy!
Thank you so much--hubbie said it sounds very much like a particular salad he really enjoyed years ago!! I will give this a try. Is the rasberry walnut vinaigrette dressing difficult to find or is it in most stores? I can hardly wait to try this!!

Its probably on the shelf with the other salad dressings....there are also a couple of the "fresh" ones in the produce dept probably over the lettuce or bagged salads.
Basa ? I think it's an Asian catfish. Might be nice to find a southeast Asian recipe for it.
As for what I'm having tonight, it will be a plate of Skinless and boneless large sardine fillets with hot carrot slices and pickled jalapenos. green olives smoked cheddar cheese slices and some garlic rubbed Ritz crackers. A large glass of grapefruit juice will do to wash it all down with.
And what's crazy about this dinner is that I won't have a bellyache from it !
I went on line and looked up Basa. It is a cat fish from Viet Nam Mekong River. It can most simply be grilled and served with lemon butter and parsley or they did list an asian recipe:
Basa in Ginger Sauce
4 basa steaks
1 pint (600 ml) milk
1 tbspn cornflour, cornstarch
1 tbspn olive oil
1 onion, peeled and finely chopped
1 inch (2.5cm) piece root ginger, peeled and grated
dash of chilli sauce
1 tbspn lemon
1/2 tspn sugar
1 tbspn soy sauce
Grill the basa steaks for about 5 minutes either side - brush with oil to prevent drying out.
Meanwhile, fry the onion and ginger until softened.
Bring the milk to the boil and thicken with cornflour.
Add the fried onion and ginger and the rest of the ingredients to the sauce, stir thoroughly and pour over your grilled basa steaks. This is an indonesian method of serving basa fish and you would perhaps like to try it with noodles.
Sorry, but fish from the Mekong Delta sounds...icky. Give me good old American polluted waters fish instead. Like, ever since I saw a show in which they were raising a type of bass in sewage and calling it Tilapia, I won't touch it anymore either.
