Well gotta go guard the ice cream machine. No sharing with the munchkins tonight. It's mine all mine. LOL No just have to make sure my youngest doesn't break it by sticking his fingers in it.
Deciding if I should make a menu for the week.... I am reading along at you organized folk with your long list of well thought out meals.... and am starting to panic that I haven't a darn idea of what I am going to make tomorrow..... I have been on vacation for two weeks and now I am going to have to figure out what the heck to cook that family of mine..... I don't think I have actually turned my oven on since Christmas morning!!!!!!!! I should probably take inventory and see what it is I can actually MAKE for dinner tomorrow..... ugh.... and Diva has religion tomorrow.... OH BACK TO LIFE.... BACK TO REALITY...... ugh....................
Swordfish, pasta and green beans all came out very well, and they even all finished up at the same time. Tasty stuff, if I do say so myself, and spouse cleaned his plate with alacrity, which is the best recommendation I could hope for.
I do so enjoy having a chance to play in the kitchen once in a while, though I wish this occasion was for a different reason. My poor spouse slipped and fell down the front porch steps on New Year's Day (the cat had escaped when we were taking the Christmas tree out, and we were running after him) and injured his foot, so he's not feeling up to being on his feet a lot just now. I know he's hurting, because he has actually agreed to go see the doctor tomorrow if it's no better, and for him, that's a major concession. Hope that whatever it is heals fast. He's a stubborn old coot, and it irks him to be less than 100% up to speed.

This is all guesstiments (he he) I normally eye ball it.
equal amounts sour cream & mayo. About a 1/4 cup of each.
sm red onion cut fine
couple dashes worcester sauce
couple dashes tabasco
2 table spoons dill weed (I use fresh & dry spice)
1 lemon
Mix this all together and let cool in fridge an hour or so. Let the flavors marry I have not had a fish I did not like this on. I guess it depends on if you like tartar sauce on fish at all

The electric pressure cooker didn't make any steam, so there wasn't any cabbage smell while I was cooking it, and I was really looking forward to corned beef leftovers for a sandwich tomorrow....but my lousy no good terrible rotten family ate every scrap on the table.
We just finished having breakfast for dinner. It was supposed to be scrambled eggs and pancakes for the both of us, but DH ate all the eggs and left me the pancakes, because the pancakes were "ugly". I have to admit - they were! I knew there was a reason I never made them. I had forgotten how sloppy looking they always turned out.
I make the pancake batter just fine and know it is the right consistency. I don't have a griddle, but have a frying pan which I grease. The first side down comes out fine. I can't seem to get butter under the pancake again when I am flipping them, so they stick to the pan horribly. I guess that is one of the down sides to having to cook with stainless steel pans and not being able to use anything that is non-stick.
The pancakes looked horrible, but they tasted just fine. I just had to close my eyes a couple of times. LOL.
