Amen to that. Just smashed avocados and some fresh lime juice and salt to taste, plus the addition of a little fresh pico de gallo for extra bite. Mayo or sour cream is verboten.

Now I would add a diced roma tomato and a jalapeno and minced green onion to this, but then it's not so kid friendly..

Good guacamole depends mostly on the quality of your avocados, of course.
The Hass avocados here have been wonderful lately.
My guac is pretty much like yours, Debsi--I also put some cumin, and usually I use regular chopped onions instead of green onions. Cilantro is nice too.

I wholeheartedly concur.

We're having mahi mahi tonight, with avocado tomatillo sauce, and mango salsa on the side.

We have been gorging ourselves on avocados ourselves, so yummy.
A friend gave me a gallon baggie of fresh greek oregano, so I think I am gonna make some souvlaki, maybe some kind of potato to use oregano in also?
Think I will dry the rest, its really wonderful to have some of the greek variety!

much more aromatic, with a different flavor...... the Greeks I know wouldnt use the Italian variety in their cooking. I always try to keep a pot of it growing, but when Tropical Storm Fay came through here last fall, it drowned all my plants. Getting ready to plant some herbs this coming week, though!

Gucamole is chillin' in the fridge folks thanks to your help! I put garlic, salt, cumin, lime juice and diced tomatoes in it. I liked it so we will see how the kids do without mayo in it. I like sliced avacodos so I probably would eat it anyway it is made.
