Saw a recipe for a beef stir fry that looked good. It included canned apricots. Hmm.

In regards to bjh's stir fry.... that sounds really interesting.... are you making it tonight? mind posting it? wonder if Diva would eat it.... once she sees certain things mixed together she decides they just don't MIX and won't eat them.... hmmmm..... like peanut butter and meat for peanut sauce.... it can really get annoying....I try and cook when she is at school if I make anything too unusaul....

that really sound good.

Got my pork roast in the oven with roasted potatos, broccoli and strawberries with key lime cool whip.
Invited 2 friends to join us.
Had no applesauce but found a can of cranberry. Think that will be okay?

I'm going out with friends for dinner since it's my birthday. We have reservations at the Animal Kingdom lodge at Disney. It is just a fabulous place with safari animals right outside the windows. It is the perk of getting to live so close to the world's biggest vacation spot. I'm really looking forward to it.

Wow....happy bday...enjoy your dinner and I am so excited to hear about this as we will be going to Disney this Spring... I will have to check that out... My girls would LOVE that!

Yes, I'm glad to share. I'm at work right now but will get the recipe (it's at home) and see what I need to buy at Krogers.

What are you subbing cran for eliza? Just along side the pork as the sweet to the pork's savory? I think that would be awesome.
