We had chicken tortilla soup tonight, felt light and healthy.

Left out the ooey-gooey stringy melted white cheese (OK, so I missed it a little! ), but did include the avocado slices and I pan fried the tortilla strips in a little bit of oil until they were golden brown and crispy.

Football season is over, and so too is the excuse to eat chicken wings, nachos, and other deep fried goodies every Sunday.

I suppose I should be considering what's for dinner tomorrow....

Someone mentioned chicken livers earlier. We may have freezing rain so got to the store tonight and am making chicken livers and rice.

Fry chicken livers
Cook rice in chicken broth with chopped onion

Put both in a baking bowl and mix in bacos.

Bake covered for 30 minutes! It really is good, and not too many calories.

We had some friends over to share our wonderful pork tenderloin. BF marinaded it for a few hours in a mix of fresh rosemary, lots of chopped garlic, e.v.o.o., dijon mustard, maple syrup, horseradish, hot sauce, s + p. Then he put it in a roasting pan atop 5 sprigs of rosemary and laid bacon over the top of the pork. I threw in potatoes, carrots, and onions around it and we cooked it at 375 for about and hour and a half (it was a big loin). It was so simple, yet so delicious. Can't wait to have a sandwich with the meat for lunch tomorrow!
