Omelets. They can be as simple or complex as you'd like - or whatever you've got in the fridge. But best of all, they're easy and quick to make. Yesterday, I cooked an omelet made of leftover Italian sausage and tomatoes.

Another is beef with vegetables.
- Marinate beef in ginger (to get rid of unwanted "beefy" flavors) and soy sauce for about 10 minutes (I suggest getting the pre-cut beef so you don't have to handle it and prep time is reduced.)
- Prepare whatever vegetables you have available while beef's marinating
- Heat up vegetable oil in a frying pan or wok
- Add beef to pan and when edges of beef change color, add vegetables.
- Not sure how you prefer your beef but serve with either rice or mashed potatoes.

Good luck tomorrow night!

molochai that is fantastic news great job!

DezertGirl now you made me hungry again.

Nomad I can only think of water for a snack that fills your calorie free. I am sure you were looking for something on the chewing side?

Grilled chicken with basil, spinach, diced tomatoes. Another grasshopper for dessert - the cookie that is.

Yes, it is warm enough to grill here, has been for a couple of days. But we're getting more cool air soon.
