Morning everyone, busy weekend didn't get a chance to get on so I am not going to attempt to read back, missed way too much.

Dinner Saturday was hot turkey sandwiches and chili frys. (Hubby has been craving junk food, I need to bake something today). Dinner last night was Thanksgiving without the cranberry sauce. LOL I found a turkey breast at Sam's so I reheated that and had stuffing, mashed potatos and corn. I even made an apple pie. Yummy!!!!

Tonight for dinner, not sure yet. I am thinking of making spaghetti. Have to see if I am inspired today.

Well, my DP does feel like fish........so I am going to cook him the filet of Artic Char (Shad).....he likes it and I dont ..... so for me it may be a pork chop....who knows.....(its much more fish than he can eat cuz I cut and froze it before I knew I didnt like it.............so there will much more than enough for him!

I just got back from the meat market so the freezer is pretty full of food. I can't complain!

I can't help with a recipe but some years ago my sister used to make Boston Cream Pie from a commercial mix that was quite good. have you checked among the cake mixes at the market?

Good afternoon everyone!

I fell this morning while I was stretching, I was getting ready to get on my treadmill. I don't know what happened it never happened before, but apparently, I lost my balance grabbing my leg from behind. I fell into my DH weights. Darn, I got a huge lump on my shin, and a small one on my knee. I'm sure tomorrow I'll have bruises on my left side. Getting old sucks. But the good news is, I worked out about 30 minutes later.

Tonight for dinner I am making, Lemon Feta Chicken. It's really a simple meal to make. Chicken cutlets, lemon juice, oregano leaves, pepper, feta cheese and green onions. If anyone wants the recipe let me know.

Really simple dinner tonight, I have defrosted some of my home-made "bolognese" pasta sauce ( I made a huge pot of it a couple of weeks back) , so it will be spaghetti or maybe tagliatelle with lots of fresh parmesan.

Lemon Feta chicken sounds gorgeous, I would love the recipe HawaiiLover if you don't mind divulging your secrets ...

Sure, Mooseketeer.

8 skinless boneless chicken breasts
1/4 cup lemon juice (I use a real lemon)
1 Tablespoon dried oregano leaves
3 ounces crumbled feta cheese (I use more, since I love feta)
3 tablespoons chopped green onions (scallions)

Preheat oven to 350 degrees
Place the chicken in a 13x9x2 inch nonstick baking dish and drizzle with half of the lemon juice. Sprinkle with half the oregano and all the pepper.
Top with the cheese and green onion. Drizzle with the remaining lemon juice and oregano. Bake, covered, for 45 minutes or until chicken is done.

I use thin chicken cutlets so they're usually done within 30 minutes.
