Cyn I've seen them make really crispy chicken on TV simply by putting a plain bone-in chicken thigh skin side down in a hot skillet and cooking it for 15-18 minutes.

My fave way to cook chicken thighs is to coat with seasoned flour and bake for an hour. I guess we like our chicken "well done" ! It gets very very crispy and fall off the bone tender. Sometimes I put the broiler on for a few minutes at the end.

Cyn, when I have legs & thighs, I love to make good old chicken cacciatore. Dust chicken in flour and brown in oo. Put a 28 oz can imported crushed tomatoes in a Dutch Oven, lots of minced garlic, 1/2 minced onion, 1/4 c dry red wine, garlic & onion powder, Italian seasoning, s & p. Add chicken and simmer, covered about 3 hrs. Serve with mashed potatoes, salad & Italian bread. It is the ultimate comfort food on this nasty day in NC.

Hi all...Been going out to dinner almost every night, I am moving on saturday so must of my pot and pans are packed...but soon I will be back posting what dinner I cook...

Before I forget, comfort food here tonight too. Smoked Kielbasy with red, sweet cabbage and baked beans. Simmered all day in the Crock Pot. I don't know what I did before Reynolds came out with their Crock Pot Liners. After the burgundy beef stew last night, I put the rest of the stew in Rubbermaid containers, took the liner out, threw it away and put the Crock Pot away. That's what I call an easy cleanup.

Good morning. It is wet and rainy here. Last night's chicken was very moist and delicious. Tonight will be leftover chicken and salad for me and DH is having "1" lone Italian Sausage with sauce.

Cyn how many pieces? I would use a cup of rice and maybe 2 1/2 cups of liquid. You don't want dry rice.

Well since it is the legs with the thighs attached it would be two pieces. This would be ok even with the bones in it?? Or would this particular recipe be better with the chicken breasts?? There are bones in the breast too but they are skinless!!

My DD ended up going out to eat with a friend and his parents last night so I didn't cook the smothered pork chops. It's supposed to be really bad thunder storms this afternoon so I know I won't want to stop at the store but I really want those chops tonight. We'll see. Maybe I'll just have to take some red beans & rice w/sausage out of the freezer. DD won't like that. She is tired of my one pot meals. As I previously posted, she wants meat and potatoes. LOL

Cyn with bones is fine. Just brown them first. Do the rest and cook for a good hour maybe a little more.

Good morning. I think the interview went well yesterday, but it is a strange situation. They asked everyone the same 3 questions and I have the least seniority, so we will see. I should know my status by tomorrow.

BF and I are sick -- again. He started feeling it last night, I feel it this morning. I have a scratchy throat and am losing my voice, along with a stuffy head. Today is a long day at work too, but I am trying to take it relatively easy. (as easy as you can around high schoolers!)

We are baking chicken and rice tonight, with the cheddar cheese/cream of chicken soup mix and some paprika sprinkled on top. Also having the rest of the asparagus, roasted.
