Thanks! Good to hear. Our corned beef and cabbage was pretty good, but I have to say it does not look too appetizing all cooked together.....will use the leftover corned beef for sammies

Didn't want to cook tonight. It's Popeyes for some mild fried chicken, and they had a special. It's 6 thighs for $3.99. I got those and a side of red beans and rice. Sorry, but I just had to.

Tomorrow night, I might do Salisbury steak and a vegetable medley.

hi all, I am finally back around since the trip to the dentist.

Tonight we had purple hull peas, cornbread, devil eggs and fried chicken and of course sweet tea.

I have not cooked much this week since I could not eat, so I figured I owed dh a good dinner. He was much appreciative.

Supper was delicous; we started with a tomato broth with cilantro and avocado and home fried corn strips; the entre was spagetti squash, and the small round corn crisp tortilla with refried beans and cheese and sour cream and for desert we had baked apples and walnuts with home made whip cream and a black berry garnish. It was really delicious. We had a wonderful time.

My goodness! I wish I was there for that dinner! Way to go elston!

Elston that sounded so good.

Today a no brainer-corned beef simmered in beer, garlic. Cabbage sauteed w/bacon, onions and beer. Yukon gold mashed potatoes. Irish soda bread. Stone ground mustard with horseradish.

Gee, everybodys dinners sound really good. Seems everyones in the cooking mood! I'm with you today LaseyEx--good old corned beef. I've never cooked it in beer--do you use the beer instead of water to cover it when you cook it? And I usually saute my cabbage in onions and butter--maybe I'll try the beer, bacon and onions. Could you post how you do this--you know, how much of each item? Thanks. Everyone have a great St Pat's Day!! Are you all wearing green today?

Cyn-just add a bottle of beer to cooking water to cover corned beef, add a bay leaf, peppercorns, few cloves of garlic and simmer for a few hours.

Cabbage I saute chopped bacon, add onions and saute then add chopped cabbage, a bottle of beer and a shot of tabasco. I'm not a fan of boiled cabbage or boiled potatoes.

Soda Bread-2c flour, 2T sugar, 1 1/2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp salt, 2T butter, 3/4c + 2T buttermilk, raisins and caraway if you want.
Combine flour, sugar, baking powder,baking salt and salt. Cut in butter. Add buttermilk and mix thoroughly to soft dough. Knead about 3 min.
Form 7" round, place in oiled cake pan cut a cross in center. Bake 375 40 min.

No green for me even tho I'm Irish.

I did my St. Patty's Day dinner last night for guests...it was great. I use a smoked shoulder instead of corned beef. My Irish bread went so fast that I will have to make some more today.
