I have not broken out the grill yet. Today was really the first warm day of the year. When I see a few more, I will break out my "weapons of meal construction"!
Carrots, zucchini, peas and red peppers over pasta with homemade pesto. I still had some basil left in the freezer from last summer and instead of pine nuts threw in a few cashews. Came out great. It is the first day of warm weather so I felt like being reminded of summer.
Sounds yummy RCC......so it sounds like your wife has adapted to the 'beach kitchen' with no problem! By the way, have you found a condo yet???
Yes, she has adapted well and very quickly. This condo is very well equipped for the culinary arts as is the one we are about to buy. We'll only have less than one acre so the garden will have to be efficiently planted...but mowing the lawn after having 4 acres will be a breeze. As much as we love farm country we are really beach people as we grew up on the ocean front.
Okay I'm moving!!! RCG sounds like life is perfect-and you and Mrs. RCG deserve it.
Come awn down shugah! Y'all are gonna love it here and if you move here be reminded that there IS real Italian food in Raleigh...ya just gotta know where it is or...fohgeddabowdit!! Here we have sweet tea with our pasta dishes instead of red wine
There is a perfect life after retirement and we found it here.
Salad (like every night)
Whole wheat pasta with spinach, garlic and olive oil
Vegetarian "meat"balls in marinara sauce
yummy! my daughter said she could eat the veggie meatballs every night for the rest of her life
Now that is some healthy eating!
