I ran pistachio nuts through the food processor last night along with some parmesan cheese croutons to bread up some chicken tenders i'll deep fry and put over salad tonight. Just thought I'd eat light and maybe get into something heavier on my day off.
What a great idea--making your own breading by using the pistachio nuts and croutons. I have never ever thought about doing something like that---now I will!! I always wondered how they breaded using nuts and such. Thanks so much for the share!
Tonight was cleaning the refrigerator from leftovers. Sausage, potatoes peppers, spaghetti and breaded chicken, homemade escarole and white navy bean soup with grated Pecorino Romano cheese, beautiful sliced tomatoes, fresh basil, garlic, red onion, evoo and wine vinegar, crusty bread.
I was in CT today and I stopped and picked up the best chicken pies I have ever had at Big Bubba's BBQ and brought them home.....so expensive but soooooooooo delish!
Tonight I am frying pork chops and making gravy and having green beans (cooked with a piece of salt pork) and rice for my DP and stuffing for me! Simple but I am looking forward to it.
We spent the better part of the day doing landscaping and after a nice hot bath...and two gin and tonics....I am into total enjoyment and no work. I will be hard put to clear the table, let alone do dishes.
There was a chicken pie supper at the UCC church in town.....but I was much too exhausted to even think about going. I love that the local churches put on suppers as fund raisers! Maine: The way life should be.
