Well, I got side-tracked in the yard, and didn't come indoors in time to have an early dinner -- so hubby took me out. (That's my story and I'm sticking to it!) I forgot he was getting on the road this afternoon, but he will be back in time for dinner tomorrow, and now I have some great suggestions for these chicken breasts.
I happen to have sliced ham and cheese on-hand, and the chicken cordon blue suggested sounds both fabulous and e-a-s-y. I made notes of the other suggestions, too, as it will save me having to ask again and/or searching the thread for ideas.
I also picked up some cream of chicken soup when I ran into the store this evening, and darned if there isn't a tasty-sounding casserole on the back of the soup can. I think it's actually the recipe Campbell's is touting in one of its TV commercials now.
Tonight DH will get his beloved turkey lower legs. Just fried them in the skillet and now they are in the oven for the next 2 hours.
Along with them goes kale and potatoes.
Got some beautiful corn on the cob yesterday so tonight will be baked chicken, corn on the cob and mashed potatoes. Still have much to do before my son and his family arrive May 10th so I'm keeping it simple and still good!!
what happened to the expression "knee high on the fourth of july?"

Tonight is burgers and coleslaw....going to try one of the coleslaw recipes in the recipe section.
There is a place here called My Brother's Bar (mentioned in Jack Kerouac's On the Road) and they serve what they call a JCB burger, going to make that.....
It is Jalapenos and cream cheese on a burger. Sounds kind of weird but very good!
