1 1/2# ground beef or a mixture (pork, venison, bison, whatever)
1 c. dry bread crumbs
1 med. onion, minced
2 eggs
8 oz. tomato sauce
salt & pepper

Place in a large baking dish (13x9 or bigger). Bake for 15 minutes. Pour sauce over and bake for 1 1/2 hours. Baste with the sauce a few times during cooking. The sauce will reduce and form a yummy glaze.

After last night's big dinner I think we will use the leftover turkey and top a nice big salad with it. I did make a small cake and cupcakes yesterday too, so I will still be bad and have dessert!!

Hubby is cooking up some Orange Roughy and I'm making some fresh aparagus and baked potatoes. Yum....I love both fresh asparagus and Orange Roughy!! Hubby does a great job with cooking it to perfection!!

I have no clue what we're having tonite lol. I have shrimp, I can buy chicken - I have to run to the store anyway - I dunno - maybe we'll be fending for ourselves.....maybe I'll try a shrimp scampi? hmmm that sounds good....ooo maybe shrimp alfredo...yummmm.......we'll see when the spirit moves me. LOL

getting ready to head out the door and vote, I have had marinara on the stove all day. When i get back I am going to make manicotti, garlic knots, and sauteed escarole with a bit of garlic.....yum! Got to remember not to breathe on anyone.

Personally I would rather the scampi; lol; not that you asked me to dinner. It just seems lighter and fresher. I often find alfredo sauces too rich and heavy for my taste--but thats me....most people love it.

alfredo=heart attack on a plate, as we referred to it when I was a server
Love it though!
One of fave things for a quick dinner is a bottle of roasted garlic alfredo sauce, I use barilla, 4 oz of blue cheese crumbles, thrown in a pot together and melted, some sliced, roasted chicken breast to put over pasta and sauce. Some sauteed broccoli, and packaged garlic bread, and you're done!
