Tonight is chicken fried steak with chicken gravy, mashed potatoes, peas, and my wonderful sliced tomatoes. I need a wonderful creamed cucumber recipe. Mine was quite dull . It was definately missing something. Any good ideas here???
Maybe I just didn't let them sit long enough? I used sour cream and onions.

Hey... has anyone made boxties for dinner? I am thinking about taking a stab at it this week... looking at Thursday... wondering if it might be kid friendly enough for my girls. I am really wanting to give it a try but the last thing I want is to go through all the trouble and them to pooh pooh it...that's always so deflating. Just curios...

Boxties are a form of potato pancake... not the kind of potato pancake that is made with grated potatoes... but more of ground/mashed potatoes into a real pancake... then it is made into like a sandwich/wrap of sorts.

I usually make my potato pancakes using grated potates... sort of like hash browns they are grated and then I add a batter. So, the boxtie is new to me...

Anyway...You can stuff them with things... like corn beef and cabbage... They are one of those IRISH foods... much better than black and white pudding LOL...

This sounds like a great way to acquire some tasty carbs full of much needed potassium. I never met a potato I didn't like.

Garlic!

Crush a clove along with a little coarse salt with the side of a knife blade, work it back and forth into s paste and add to the cukes/onions.

Oh Burdell...that sounds great. And lacey, dill was one thing I had also though of--I love dill! Will have to try both ways!

I don't know what we're doing for the day yet, so it's another crockpot dinner that will be ready whenever we are. (I hate cooking on the weekends, anyway.) I put a package of dry onion soup mix in the bottom, added a beef top round roast, and covered the roast with grape jelly. When we're ready to eat, I'll thicken the gravy with flour and serve it all atop wide egg noodles mixed with (canned) peas. Quick and easy - my favorite kind of meal.

Skbs - I had a steak boxty for lunch a few weeks ago, at a nice little pub-restaurant nearby called Molly Brannigan's. It was very good. Please let us know if you check out a good recipe for it.
