I guess mine would be a piece of whole wheat bread with peanut butter and slices of banana on top. And a glass of milk with that. No veggies there but every meal can't be a perfect score.
Pita bread with hummus and feta cheese. A side salad with whatever I have on hand. Maybe a salad with romaine lettuce, red onions, cucumbers and tomatoes. This would take me about 5 minutes or so to prepare. It's tasty and satisfying to me, and it's quite healthy to boot.
Heat up a little leftover rice or noodles and add some flavored broth and maybe a few veggies and herbs. When it's good and hot I add in a beaten egg and it thickens up and is hearty.
Just give me a bag of potatoes, a dab of olive oil, an onion and some eggs and I can make a total meal. Fry the potatoes and onions in the olive oil until done then beat the eggs and add them to the eggs and stir to scramble the eggs within the potatoes. I ate a lot of this as a kid and also when I had young kids. Cheap and a full meal with veggies and protein in a short time.
