Hello, I want to learn to fry chicken in a electric skillet. I read to have heat at 350 degrees. Flour your chicken etc.About 1/4 inch oil in skillet to have it halfway up on the chicken. I read to check chicken bottom side to make sure it is not burning at 5 minutes. If browned then turn chicken and cook about 15-20 minutes more. I also read that you need to wait until chicken releases from the pan.
I am afraid or confused about the 5 minutes on 1 side and 15-20 min on the other side. Tips please.

Electric skillet is good for frying because you can set the desired temperature.
I would be surprised if your chicken is browned in 5 minutes. That's just when you start your check it. Turn it when it is browned. I brown both sides and then put the chicken in the oven to finish cooking.
If you crowd the pan, the chicken won't brown well. Pieces should not be touching. So I brown the chicken in batches. Do the biggest pieces first because they take longer to cook and they can finish cooking in the oven after they are browned.
I am assuming you know to set heat at 350 and don't put the chicken in until the oil is that temperature. But other people read this forum too, so I mention it for them.
Hot oil is going to splatter when chicken is put in, so stand back. No way around it, just the joys of cooking deep fried foods.
The biggest problem with fried chicken is that when the chicken is put in the oil, the temperature dives. In an electric skillet, the recovery to 350 can be quite prolonged. Get a cheap infrared temperature gun ($12 on Amazon) and put three medium pieces in and take the temperature. If it is below 275F for more than a couple of minutes your chicke n will be good for the cat.
And, as suggested above, when it is well browned, on both sides, put it uncovered in the oven at 325F. It needs 20 minutes total but why guess. A $10 temperature probe eliminates the guesswork. 165F. Nothing less. Don't even think about it. If it turns out pink inside, don't blame me. I told you to get a probe.
Thanks for the advice. We are in Costa Rica and don't have a oven. Those that do rarely use them due to costs of electric or propane. I do have a temp probe and a lazer beam heat gun. I think we will start off with just a few pieces and learn from there.
well fried chicken is such an old recipe, I am sure it can be cooked in a skillet (in fact isn't most of it cooked in skillets? I grew up in the South, it was always a big cast iron skillet)- sorry I know at issue here is an electric skillet.

Buy fried chicken at Publix, or somewhere near you that has the equipment to make it. I could make it, if I wanted to buy a bunch of oil, and splatter grease all over my stove, then find a way to dispose of the oil, but I don’t.

this is a good point. There are some things that one cannot easily do at home.
I love fried, breaded cod. But, the mess, smell, cost of the oil (which cannot be re-used for other foods, etc. makes it impossible to beat the takeout fish place in the village.

My desire is to save money and have good food. Pre made food in Costa Rica is very expensive and my wife is not a sloppy cook.
