Chipolte sauce, green onions, and avacado on chips.

Tonight I warmed the corn tortilla on the grill, added cheese, chicken, and topped with avacado and sour cream mixed with a little chipolte sauce and green onion for a chicken taco.

All food has "taste" what you are looking for is "flavor". Try green onion, jalapenos, a bit of cayenne if you want some spice, tomatoes, sour cream, refried beans, garlic, cilantro (if you like it). There are so many different ways you can add flavor. Take what you like and toss it in a tortilla, if you don't like it together try something else. We make red beans and rice then put it in a tortilla, or picadillo, or grilled chicken, ground beef, shredded pork, a mixture of all of the above.

Oh yeah, a schmear of refried black beans would be great...add some salsa, or stir-fried/roasted peppers and onions and/or corn...that would be a very tasty and nutritious meal.

What everyone else said is perfect - I'd also add fire-roasted green chiles. And, you can try one of my most favorite breakfast dishes - Huevos Rancheros!

I love all the previous suggestions, but if you're looking for something very simple, 1 ingredient that isn't hot, to add to it to kick the flavor up a bit, put on some lime zest.

Quesadillas. Like grilled cheese, but with tortillas. You can add meat and/or veggies to it and make it really awesome.
