I'm making some apricot chicken in the slow cooker with canned apricots and gluten free tamari (I'm celiac). I'm substituting the tamari for teriaki sauce as I don't have any and I want less sugar. Do you think I will need to add anything else?

You can easily make your own Teriyaki sauce with the Tamari - I do it all the time. Look online for Teriyaki recipes and leave-out what you don't want.

I'd add ginger and garlic. It will make the tamari taste more teriyaki like. And I second the suggestion for dried fruits. Add a bit of lemon too.
