A neighbor just gave me a load of small, nearly ripe avocados. I make great guacamole, but how much of that stuff can you eat? I've already made fresh corn, avocado and tomato salad (love it!), but need more ideas.

HELP?

For the excess, mash them up and freeze for later.

Agreed. Avocados have enough fat in them that they freeze relatively well. It's not the best solution. But it's better than tossing them.

I love avocados and wish that I had your problem - $1.50 each on SALE here! If you find that you are not going to use them all remember that your local FoodBank and Soup Kitchen would be glad to take them off your hands.

One of my favorites - salt and pepper the halved avocado, fill the hole with shrimp and top with a dollop of sour cream. Absolutely scrumptious!

You can make guacamole and freeze it in individual sandwich bags, you can use it as a spread on sandwiches instead of mayo, make tacos and add avocado, make a cobb salad.
