I made the Country Captain Chicken (as I mentioned in yesterday's post), but I changed up the recipe. Added ginger and a diced tart apple. Upped the curry (and wish I had added even more...could hardly taste the curry, ifI didnt know I had added it, I wouldnt have known it was an ingredient). Could have lived withut the bacon. Could have added toasted coconut as a topping.
Over all, this recipe was delish. Really, sooo good. If you are looking for a new chicken dish, consider this one. It would freeze very well. I will definately make this one again....true comfort food.
Maybe you missed my previous question - what happens to the bacon after it is cooked, is it crumbled over the top of the chicken, etc.?
Stopped by Mama's Daughter's Diner during some errands. Had roast beef with brown gravy, mashed potatoes (also with brown gravy), red beans, macaroni/cheese, and two rolls.
Made turkey chili tonight, with black beans. Was nom, and plenty of leftovers in the fridge!
