We had leftover and even better the second time around roast beef cooked with carrots, celery, onions.
steamed broccoli with cheese sauce
lettuce and tomato salad with homemade dressing
christmas cookies
ice tea

Leftover roast beef slices with gravy and rice, along with a side of corn in butter sauce.

Tonight we have Beer Soup,and for dessert a bowl of my homemade plain yogurt with sliced oranges.

3 cups beer
1 egg yolk
1/2 cup sour cream
1/2 tsp. cornstarch
1/2 tsp. white sugar
1/4 tsp. salt
2 slices cubed French baguette ( could use any nice white bread that has some good texture)
1/2 cup shredded Swiss cheese

In a covered pot on medium heat boil gently the beer.In a bowl, beat together egg yolk, sour cream, cornstarch, sugar/salt until well stirred. Pour in the hot beer,bit by bit stirring constantly til smooth. Do NOT boil again.
Divide French baguette cubes into warmed soup bowls,sprinkle Swiss cheese over the bread bread and pour hot soup over. You can decorate with a little bit of curly parsley in the center.

Last night I had Spanakopita (a Greek dish made with spinach, cheese and phyllo dough), a cup of onion soup, half a piece of baked vegetarian lasagna and half a piece of chocolate mousse cake.

Tonight poor man's meal. (potatoes,smoked sausage, corn and green bean all cooked together)

Easy,cheap and tasty.

Meatball something. I am marinating the ground chicken with the usual meatball ingredients. Just debating an italian wedding soup, or regular meatballs and spaghetti or pizza with sliced meatballs. Or even meatball subs with salad...which it's early enough and I can make some sub roll dough.

Probably a mess of mustard greens with onions and red peppers.
And bacon. Thick, peppery, crispy bacon. Mmmmm.

(I only allow myself to eat bacon if I pair it with something like a pile of greens, or beans, or something relatively healthful.)
