delicious chicken pasta salad with grapes and walnuts and crackers. This was left over from last night's supper where I added cherry tomatoes and carrots and cornbread

I finally made the chickpea chik'n salad for lunch. It was a hit and there are no leftovers.

grilled chicken with cholulu sauce and a side of farro barley & dried cherries.

Recipe for the chick pea chik'n salad:

2 cans, drained and rinsed, chick peas
2-3 carrots, peeled and chunked
2-3 stalks celery, washed, trimmed and chunked
1/4 sweet vidalia or yellow onion
1 cup mayo
1 Tbsp mustard of choice
1/2 cup relish
seasoning to taste and of your choice.

Run each vegetable and the beans through in a food processor until as chopped as you like. (I have to make my finely as hubby has no teeth)
Stir everything together and let sit in fridge for about an hour to let flavors marry.

Today's lunch is a homemade chicken and shrimp eggroll from a batch my friend and I made and some leftover ratatouille my roommate made.
