Pumpkin #1182
Cooked, Mashed

95% of the U.S. crop intended for processing is grown in Illinois

The canned pumpkin sold for pumpkin pies is not what most would ever envision. They are a special cultivar developed for canning for canneries and are shaped more like an oblong watermelon. The link above provides a lot of interesting information on a nutrient dense food.

So sad to say but I have never had fresh pumpkin. I have had pumpkin pie and suspect that it was prepared with canned pumpkin.

I like to stir fresh pumpkin into my oatmeal, with cinnamon and nutmeg. It's like having pumpkin pie for breakfast.

That might make oatmeal edible for me. Thanks for the idea.

Pumpkin is truly a superfood. Unlike many nutritionally-dense foods, it is so filling that it's really hard to pig out on. The seeds, flowers and flesh are all tasty and good for you. And it's so much easier to carve than a turnip.

If I can find a small pumpkin next month, perhaps I will buy it and try different recipes. It is in the squash family and I adore squash and I enjoy pumpkin seeds. So that is the beginning.
