How about juicy egg salad with dill...and throw in some lump crabmeat for a splurge.
On top of arugula salad this makes a nice lunch.
Fill some toasted artisan bread with it and you have one super-fine sandwich!

I've never heard of them poached in milk. Does it do something very different to them? Do you eat them with the milk, or discard it? I can see how they'd taste a bit differently, without the watery component.

Poaching eggs in milk helps hold the egg-whites together - like adding vinegar to the water.

Scrambled with olives mushrooms peppers onions jalapenos. Sides of beans and rice sour cream and picante sauce. Meat choice turkey bacon.

My mother always poached eggs in milk and butter. She would spoon the hot milk over the yolk to put a cover on the yolk, but, it would be mostly runny. Definitely, eat it with the milk... usually accompanied by buttered toast. I make this for myself often. It's ideal for when I'm not feeling well.

Another all-time favorite is the egg in toast, sometimes called egg in a hole. The yolk needs to be runny and plenty of butter melted in the skillet.

I like them baked into a quick quiche-like concoction with a touch of skim milk and whatever veggies I have in my refrigerator.

My mom, having been a girl scout, taught me to cook them sunny side up inside a piece of toast. That's great as a breakfast when I'm running late.

Poached over lightly toasted white bread, softened with butter...Runny yokes, with a
thick slice of Virginia ham or Jimmy Dean sausage.. yeah baby!
