What about fruit kabobs ??
Probably too late, but here is what I did yesterday: I took sandwiches for 8; I also, of course had chips, but I took a cheese dip and fresh veggies and yes, fruit kabobs. Everything was gobbled down so I guess it was pretty good. One thing that didn't go over was the sweet potato chips. I thought they were different and kind of fun, but I wasn't crazy over them either.

Rotel dip with tortilla chips
Hot spinach dip and veggies or king Hawaiian rolls
Buffalo chicken dip (I can post the recipe if you'd like but I got it from Taste of Home)
A variety of potato chips
I like the idea of sweet potato fries but I would serve them with honey mustard. But how well would they keep?
A big garden salad with various dressings
