We are definitely meat eaters, but we eat a ton of veggies too. Even though I don't think we have an unhealthy diet, we take a break about 3 times a year and have no meat, no bread, no dairy, and no sweetners at all. This week will be such a time.
What I made today: Breakfast - granola with unsweetened coconut, rolled oats, chia seeds, raw sunflower seeds, raw almonds, raw cashews tossed with coconut oil, cinnamon and a pinch of salt and baked until desired color has been reached. Cool and toss with pieces of dates. We ate it with unsweetened almond vanilla milk.
Lunch - kale and white bean soup.
Dinner - lentil loaf with balsamic glaze and caramelized onions, oven fried potatoes and green beans with garlic.
We also ate bananas, apples and dates. I made a big pot of vegetarian chili for lunch tomorrow. The kids will take that to school along with tortilla chips, grapes, apples, and they will have a whole grain tortilla with peanut butter and banana before swim team practice.
I can do without meat, but I like it. Recently went to yoga retreat, eat vegetarian for 4 days, no problem, it was good for a change. They did have milk, eggs, butter...just nothing that would harm an animal. Yummy meals, I never felt stuffed and no animals harmed.

It's been a while for me, if I've ever done it. A meal, yes, but I don't think I've ever gone meatless an entire day, unless I was sick.
