Recipe for Banana bread ?
I was wondering whether anyone would have a good recipe for one of my favourite treat which I only seem to be able to get in the US. Thanks.

My wife makes a great banana bread with chocolate chips.
Now, I have no idea where she keeps her recipes.

You'd have to convert the measurements but you can find a chart online for that. Be sure to use overripe bananas.
BANANA BREAD
3 ripe or overripe bananas, mashed
1 cup sugar
1 egg
4 Tablespoons butter (1/8 pound) melted
1 tsp vanilla extract
1 1/2 cups regular flour
1 teaspoon baking soda
1/2 teaspoon salt
Preheat the oven to 325° Fahrenheit. Grease & flour an 8" loaf pan. In a alrge bowl, combine the mashed bananas, sugar, egg, melted butter & vanilla. Beat until thoroughly mixed. In a separate bowl, whisk together the flour, baking soda & salt. Stir the flour mixture into the banana mixture just until blended. Pour & scrape the batter into the prepared pan. Bake 1 hour or until a wooden pick inserted near teh center of the loaf comes out clean. Allow the bread to cool in the pan for 10 minutes, then turn out onto a rack.

INGREDIENTS
* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 1/2 cup butter
* 3/4 cup brown sugar
* 2 eggs, beaten
* 2 1/3 cups mashed overripe bananas
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
I used to hate Banana bread...until I had this recipe. Now it's my secret weapon

vanilla extract yup use that. i also tend to use 1/2 the recommended sugar and it turns out great. i am gonna try brown sugar next time, never thought about that.

Moose, my recipe is similar to Smerky's except I seem to remember a half cup of plain yogurt going in, and maybe less butter, or none, not sure.
And sometimes, if I am in the mood, I add a few chocolate chips.

3 large bananas, or 4 small
1/2 cup sweet butter
1 1/2 cups sugar
2 large eggs
2 cups self-rising flour
1/4 cups walnuts if desired
Bowl 1 crush bananas and whip(yes, whip) until very light, I whip them about 5 minutes.
The bananas will liquify, which gives this bread a very delicate texture.
When I take it out of the oven, I place foil over it and let it sit for about 1/2 hour before taking it out of the loaf pan*.

Banana Bread
1 3/4 cup sifted flour
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/3 cup veg shortening
2/3 cup sugar
2 eggs well beaten
1 cup mashed bananas
Preheat oven to 350. Sift flour with baking powder, soda and salt. Set Aside.
Cream shortening with sugar until light. Add eggs beating well. Add flour mixture alternately with bananas beginning and ending with flour. Spoon into well greased pan and bake 1 hour and 10 min.

i always put in more bananas and I use 1/2 babyfood bananas and 1/2 regular. It sounds crazy - but it makes it so moist!
