Arugula salad with lemon vinaigrette, bruschetta, creamy pasta primavera (the cream sauce is made with pureed white beans as the base). Lemon sorbet for dessert.

Leftover Chinese food from last night, which was Peking pork chops and fried rice. I also had a side of steamed broccoli.

Thanks for the recipe link.....it looks good to me.....maybe next year when my son and fam come to visit....for me and my partner....it would be too much. It looks like he would love the recipe for when he starts his "fire pits" family and neighbors gathered around the fire.....all summer and half the winter up in maine......this soup looks like it could stand up to the informal gathering and the cold.

It's good Summer and Winter.

We usually make soup and freeze half. What we had last night came from the freezer.

PS...you can add in some crab and make it a little more luxurious.

Tonight we have eggplant slices in spices and lime juice with chapatis,homemade plain yogurt and lassi.For dessert creamy banana quark.. 2 ripe bananas
500 g Quark chilled
2 Tbsp lemon zest
4 Tbsp milk
honey to taste
4 Tbsp chopped nuts
Mash bananas and add mixed remaining ingredients except nuts. When you serve in little bowls sprinkle some plain or roasted nuts of your choice over the banana/quark.

Sliced eggplant in spices...
1 tsp turmeric
1 tsp ground coriander
salt to taste
2 tbsp lime juice
2 small eggplants
4 tbsp olive oil
fresh cilantro for decoration

In a separate bowl mix all the spices/salt with the lime juice to make a thick paste. Cut eggplant unpeeled in 1/4 inch slices and smear the paste on each slice and let sit on a plate for 1 hour. Lay eggplant slices in heated frying pan,all in single layers,cover with a lid and cook on very low heat for roughish 5 minutes. Than turn over the eggplant slices,cover and cook another 5 minutes until well fried. Serve right away sprinkled with cilantro and add with it rice or chapatis.

I wanted some comfort food tonight, so I'm making manwiches with ground turkey, and baked beans. Ice tea to drink, Ben and Jerry's half-baked fro-yo for dessert.

I am going to do beef and vegetable with lo mein noodles--sort of stir-fry style.....thinking about using oyster sauce with it. Do you use the oyster sauce plain or with mirin and soy etc??????
