I'm in Tucson, visiting family, and my sister is making pot roast and spaghetti squash. Sounds good to me, especially since I didn't have to cook it!

For the stew? I've made the recipe from Therapeutic Chef by Kristin Doyle and it was fantastic. However, I let someone borrow that book, so I'm trying this one tonight (adding sweet potato and not serving with rice) Vegetarian West African Peanut Soup

Some kind of Chinese something. Not real sure. It was good though, what ever it was.

Carry out tonight.

Smoked BBQ ribs, homemade mac and cheese, and sweet potato mash with a crust of crunchy brown sugar and pecans.

I think I gained 5 lbs and couldn't even finish it all.

We changed our birthday party plans and tried a new-to us- Italian place. It was incredibly wonderful. I had a delicious cheese ravioli with a sauce of Italian sausage, mushrooms, yellow peppers and spices and no tomatoes.. Oh how I wish I could find this recipe. DH had mushroom ravioli in a light cream sauce and oldest DD had a dish with spinach, artichoke hearts and pasta, while girls shared a huge plate of fettuccine alfredo. Then they brought out a HUGE pice of cheesecake for the birthday girl. You know how most places serve a tiny piece of cheesecake? Well this was so big she had 2 big bites and then passed it around the table twice for the rest of us. And it was FREE. what a heavenly night! and the bill was only $66 for 5 of us in a really nice restaurant. No salads or drinks but we all certainly had plenty to eat.

We seem to be on an Italian sausage kick. I imagine it will be white rice and some sort of green vegetable for the sides.

I am running late today, our water tank started to leak last night and people came this morning to replace it,had to clean up the mess ...at least all is good now
Tonight we will have something fast, easy but yet delicious
Moroccan spicy carrot and chickpea with turmeric and cilantro and basmati rice.
4 tbsp olive oil
1 large diced onion
4 garlic cloves finely diced
2 tsp turmeric
2 tsp cumin seeds
1 tsp cinnamon
1 tsp red hot pepper
1 tsp black pepper
1 tbsp honey
4 good sized carrots diced ( you can cut the carrots any way you like)
29 oz chickpeas ( I pre soaked the night before chickpeas and cooked them softly in the morning)
salt to taste ( I use Mediterranean salt in all my cooking)
2 tbsp rosewater
cilantro and lemon wedges for decoration

In a big pot saute onion and garlic until soft, add turmeric, cumin seeds, cinnamon, red hot pepper, black pepper, honey and the diced carrots.Add just enough water to cover the bottom of the pot. Cover with a lid, reduce to low heat and cook roughish 15 minutes. Now add drained chickpeas, mix and add some of the leftover cooked chickpeas water if needed..Cover again with a lid and cook for another 10 minutes. Flavor with salt and sprinkle carefully with rosewater and also sprinkle generously cilantro over the dish. Serve with basmati rice, naan or chapatis and an extra bowl with plain yogurt if you like..we do... don't forget the lemon wedge on each plate

For dessert and for the weekend I made, now in the oven a Clementine Cake
Grease with butter a medium sized cake spring form, line with wax paper and smear with butter again.
Puree 5 peeled, pitted clementines and add 2 cups slivered almonds,3/4 cup sugar,1 heaping tsp. baking powder and 6 eggs. Mix all well together and pour in spring form and put in oven at 350 F for 1 hour. Test cake, must be golden brown, sometimes it takes longer, for every oven is different. Let cool, loosen from rim and transfer on a plate. To make it more fancy add a thin lemon icing on it and serve with whipping creme.
* We have all of the above

Have a good weekend all
