I am not sure yet.....it is hard to plan a diet meal for me....and also a meal that will satisfy my DP. I have been doing pretty good with it....but it takes some thought. I am not there yet today.
Tonight we have a cheese curry dish with chapatis,lassi and for dessert 1/2 a pink grapefruit
2 cups grated cheddar cheese
3/4 cup cornflour
1 tsp black pepper
Salt to taste
Sunflower cooking oil to deep fry the Koftas (cheese balls) (any oil of your preference for deep frying)
1 large onion cut into quarters
1 1/2 large tomatoes cut into quarters
2 green chilies cut finely
1" ginger
4 garlic coves
1 tsp coriander powder
1/2 tsp cumin powder
1/8 tsp turmeric powder
1 1/2 Tbsp olive/or sunflower oil
1/2 tsp garam masala
2 tbsp whipping cream
Fresh cilantro for decoration
Knead grated cheddar cheese,add black pepper and cornflour bit by bit and make a smooth semi firm dough.Divide dough into equal balls and roll smooth. ( I put a bit of oil in my hands and they become smoother than).Fry cheese balls till golden making sure to turn them often so they don't burn. When ready remove them with a slotted spoon and drain on paper towels.In a food processor add onion, tomatoes, green chilies, ginger/garlic and powdered spices except garam masala and make a smooth paste.
Fry and stir the mixture in a pot with desired oil regularly.When paste is browned,add garam masala and fry for another minute.Next add 1/2 cup hot water to this masala and stir well,adding salt to taste.
Next add the prepared layed aside cheese balls and gently stir.Cook for another 2 minutes and shut off heat.Finally add thick cream and again stir gently.The sauce should look thick and creamy. Sprinkle with finely cut cilantro and serve with naan,chapatis or basmati rice.
I just pounded some chicken breasts pretty thin. cream cheese, pesto, parmesan cheese and then roll up and secure with toothpicks. cook in a bit of oil and butter.
saute onions, garlic and mushroom, add white whine then add half and half and cook. Serve it all over rice. yum--at least in my head. no reason why it won't turn out great.
A black cherry non-fat Greek yogurt, 2 toasted whole wheat slices of bread with strawberry spread and a large mug of Ceylon tea with a teaspoon of sugar and a bit of non-fat milk.
Boneless/skinless chicken thighs w/chipotle sauce and spinach.
