Didn't have the potato-crusted cod last night - it didn't thaw out in time. So tonight cod with a squeeze of fresh lemon, boiled potato with sour cream, melted cheddar plus a jalapeno pepper on the side and leftover steamed spinach.

I happen to LOVE his recipes! But I've made a few minor modifications to make it easier. Less ingredients.

If I recall his recipe calls for Scotch Bonnet peppers. I can handle them and one of my kids can. But not the rest of my family.

I'm strange in that I have never encountered a recipe that I did not fool with in some way.

You need to try mine. But my recipe is fairly mutable, depending upon ingredients available and my mood.
I'm a fan of Steve though.

I started with his recipe and changed it a bit too. It's easy to adapt to mood and what you have on hand. I like habaneros, and I use oatmeal instead of bread crumbs. I use some dried ancho chiles sometimes. I like sweet mango chutney on it.

Tonight's dinner:

Vietnamese 5-Spice Beef Cubes over Rice
Served with a seasoned lamb broth with a vinegar base (sounds different but great)
White rice.

Wanted something other than the usual pho.

Take out Chinese....again. There's this little local place that has a dish they call Tung Ting Shrimp (don't know if this is a regular asian/chinese dish or not) ....huge shrimp with broccoli and mushrooms and chinese vegetables. So good.

Grilled a large sirloin steak, which DH and I split, and made garlic mashed potatoes and steamed green beans to go with it. Chocolate cream pie for dessert.
