Believe it or not - freshly steamed cabbage from last summer. There is something to be said about growing your own vegetables.





With the cabbage, Crockpot pork steak and mashed potatoes.

It is only about 48 hours before we leave, so I am cleaning out the fridge. We are having salmon, some broccoli that needs to be eaten and a green salad, consisted of almost nothing: tomatoes, lettuce, a little cuke and a few radishes. That is it...I might make a tiny bit of pasta, but am not sure.

I bought two small egg plants yesterday will have eggplant parmesan tonight with pasta, (there is also some leftover grilled chicken from last night...DP will probably want some of that.

Tonight we have Chicken Tikka with basmati rice,cucumber raita and for dessert someone brought us fresh made Gulab jamun and with it a cup of Darjeeling tea

1/2 cup yogurt
1/2 tbsp lemon juice
1 tsp ground cumin
1/2 tsp ground cinnamon
1 tsp cayenne pepper
1 tsp black pepper
1/2 tbsp minced fresh diced ginger
salt to taste
1 1/2 boneless skinless chicken breasts cut into cubes
2 long skewers
1/2 tbsp butter
1 clove garlic, minced
1 jalapeno pepper finely cut
1 tsp ground cumin
1 tsp paprika
salt to taste
4 oz tomato sauce
1/2 cup whipping cream
fresh cut cilantro

In a bowl, combine yogurt, lemon juice, cumin, cinnamon, cayenne, black pepper, ginger, salt.Mix well and add chicken cubes, cover and refrigerate for 1 hour to marinade.Preheat grill.Put chicken on skewers and get rid of marinade.Grill about 5 minutes on each side.Meanwhile melt butter in a frying pan over medium heat, saute garlic and jalapeno for a minute and flavor with cumin, paprika, salt. Add tomato sauce and cream. and simmer on low heat until sauce becomes thick almost 20 minutes. Next add grilled chicken and simmer for another 10 minutes. Serve with fresh cilantro and basmati rice or naan,flat bread,chapatis or even on a bun with green lettuce.
*If one does not have a grill,one can put the chicken on a cookie sheet and cook it that way..taste just as good

I am going to put up a couple loaves of bread later and this evening I am making fresh noodles with onions sauteed in butter and a plain hamburger, cottage cheese and applesauce.

using my easter ham bone for 15 bean soup in the crockpot now. I'll make cornbread and yogurt and strawberry , iced tea
