We ended up going with neighbors to a town a few miles away and had Pizza Hut Thin and crispy Super Supreme and cheesy breadsticks.

Default I had some friends over for dinner...

For dinner I made Chicken Cacciatore with kalamata olives, rosemary and red wine vinegar. I served it with fettuccine noodles tossed with the gravy of the chicken and sprinkled with freshly grated Parmesan cheese.

Also a tossed green salad with grape tomatoes and Japanese cucumber, and for desert I made strawberry shortcake with whipped cream.

I haven't fixed it for about 6 months and spoiled brat loves it, so it is time to make the old time tuna casserole. I want to do it before our temps get any higher. In about 2 weeks or so, it will be way to hot to use the oven anymore than necessary. We will also have green salad with the casserole and there will be enough left for him to have lunch tomorrow while I am at bridge.

Ziti with clam sauce, sausages for my youngest and chicken with Leabonese garlic sauce for the husband, #1 son and me! I am actually making desert which I never do, just simple baked apples with real maple syrup and cinnamon.

I had grilled up a couple of dozen boneless chicken breasts about a week ago. Just grilled on the BBQ, with a little salt and pepper. I cool them down and wrap each one individually in my Food Saver and freeze them.

I pulled some out this morning, they are defrosting in the fridge. I'll heat them up on the grill till warmed through and slather them with some BBQ (Famous Dave's) sauce. An iron skillet corn bread and fresh green beans with canned, diced tomatoes, garlic, Italian seasoning and S&P and there's supper.

Not too much effort. I love to freezer cook items that can be used in many different ways. Sometimes I'll brown a few pounds of ground beef at a time and freeze it in individual portions for what I may be cooking {chili, tacos, poor man's stew, stuffed peppers, etc}

Spaghetti sauce is another one of my favorite freezer saving meals as well as prepared meals I make in large batches, beef stew, chili, chicken paprika, sweet and spicy chicken, beef tips with wine sauce, lasagne and a few casseroles that are tried and true recipes.
