Broiled flounder with a lemon butter sauce, green beans cooked with new potatoes, sliced tomatoes, and cucumber salad. Unsweetened iced tea to drink. Dessert is coconut cake topped with strawberries and whipped cream.

A low fat strawberry-banana Greek yogurt, 2 lightly toasted slices of natural crispy rye bread with healthy-style margarine and baked salmon spread and a large mug of tea with sugar and milk.

Something different and a really nice change...A big Greek salad with olives and feta, onion, cuke, tomato, and light Cardini's Greek vinaigrette, with a grilled skirt steak that was marinated in the same Greek dressing.

I spatchcocked a chicken and loved it! Also made some jasmine rice and garlic spinach to go with it.

Default Collards Green, ribs and chicken

Collards greens on a Thursday night, go figure. Good thing I was off today, those fresh collards took a long time from start to finish. I also made rice yams and cornbread, I'm tired now. Sorry my pics are not right side up.
