Old fashioned scalloped corn casserole. Breaded and fried zucchini slices with a choice of home made ranch or marinara dipping sauce. Sliced tomatoes.

Tonight I am going for a different version of 'corned-beef and cabbage'. Garden-fresh cabbage, parsnip, potato, carrot and the small piece of leftover chuck steak - all to be combined in the Crockpot. Hopefully, it will be tasty.

A non-fat strawberry Greek yogurt, 2 toasted slices of whole wheat bread with healthy-style margarine & strawberry spread and a mug of tea with a teaspoon of sugar and a bit of skim milk.

On my own and grazing tonight. Started with a peach. I think what I really want is nachos but that means doing everything from scratch, including the chips and that's more effort & mess than I want to face. Maybe I'll just do some refried beans topped with cheese & salsa and call it good enough.
