Leftovers tonight. DH is having the Chicken Francais with tortellini, and I'm having Spaghetti.
I'll make some potato salad for tomorrow to go with the BOGO beef BBQ I got at Publix yesterday.

Defrosting cooked pork for tonight with rice and beans, plantains and tomato salad. Marinating some chicken in sake and soy now for tomorrow's dinner of Asian chicken with veggies and rice or noodles.

It turned out quite yummy! I like parsnips and didn't put in a ton of them so they were a very nice addition.

Although the stew was tasty, I found that the character of the stew meat was different from when I have prepared it stovetop. The meat was drier and shredded easily in comparison to stovetop where the meat is usually more juicy and holds the bite-size shape better.

If time is a major factor, I'll prepare stew in the Crockpot. But if I have the time, I'll prepare it stovetop.

Roast pork with gravy and homemade applesauce, roasted potatoes, steamed broccoli and carrots, fresh salad, and (I think) chocolate cake with chocolate ganache frosting.
