Have to let you know about my vegetarian stuffed squash tonight. I did scoop out the middle of the squash, I did use the left over rice and coucous but I also used left over Asian cold slaw from last night. It had cabbage, carrots, green onions, ginger and citrus soy sauce in it. I topped the whole thing with grated cheese and a little olive oil. It was so good I am convinced vegetarians can enjoy food just as much as us meat eaters. No, I am not going to give up my meat, but it was really yummy..

I ruined 3 sticks yesterday trying to cut a blasted 1/2 a stick!!!!!! (What I went with was TOO MUCH and it wasnt that good)

Its still early, but it will probably be oven baked chicken with herbed goat cheese and sundried tomatoes, rice pilaf and a veg.

Well, I keep waiting for the real summer to get here so we can be happy with just a big, fresh salad but summer seems to be passing us by. I do have a bridge luncheon today that I am hosting, so I don't have time to worry about a fancy dinner. Spoiled brat is going out with his friends for lunch. I had thought of a salad but like I said, it just doesn't seem like anything we would really enjoy. I think I might just heat up some pasta, top it with basil and maybe a cream sauce and cook up some Italian sausage. I will make a small green salad as well. At least it is a simple meal.

Tonight we have homemade pizza from Durum flour with flax seeds,tomato sauce,green peppers,red peppers,onions,chilies,garlic,green olives and Canadian cheddar cheese. With the pizza a red radish salad and a beer. For dessert a fruit salad with apples,pears,kiwi,plum,peach, green grapes,roasted almonds,vanilla sugar,lemon juice and a shot of Grand Marnier.
