Just got home from another run around day and I have a sore throat anyway so I have put on corn and roasted squash soup. I just roasted the squash, now that it is cooled I will mash it, add the rest of ingredients and we will have a simply but healthy dinner.
I'm making individual meatloafs for us. I usually make the normal log but it's too much for the two of us. So I bought a muffin pan and am going to make about 4-6 of them so we can have some tonight and some on Sunday for lunch and then they're gone!
